souffle me; do not disturb.

butter the pan, sprinkle with grated hard cheese.  brown the butter and saute the onions – not too much salt. grate the gouda. more butter and flour, make a roux.  add warm milk, then once ts cooled, add eggs yolks.  whip the whites into soft peaks, and fold it in so slowly, sprinkling it with cheese and onions. pour into the pan – be gentle.

bake until risen, do not disturb. 20 -25 minutes, 400 then reduce it to 375 when you toss it in. wait until the top’s browned lightly. serve immediately.

I think Julia Child knew what she was doing..
