The Diner is Open

I run a diner just for my mom.  First, I serve a lovely soy mocha to her while she checks her e-mail (with an imaginary cigarette hanging off of my lip, of course, in classic diner style).  Next I drink my own coffee and set to work.  If left to her own devices, toast and peanut butter or oats are standard fare.  When the diner is open, she is so happy.

Today’s special was Sarkozy’s sourdough toasted, with a yogurt, cottage cheese and shrimp spread, topped with scrambled egg and avocado.  And local apples 🙂

Ad Hoc Yogurt Spread

Note: The shrimp were just leftover from dinner last night, so they could be omitted or you could use leftover fish, some tuna, or smoked salmon if you like. 3 ounces greek yogurt

  • 1-2 tbsp cottage cheese
  • juice of half a lemon
  • salt and pepper
  • chopped up shrimp (I used 3 leftover jumbo shrimp)
  • 1 tsp dijon
  • dash of garlic powder
  • 1/4 tsp dried dill, or fresh if you have it
  • dash of powdered coriander

Mix it all up and spread it on the toast, top with the egg, avocado, and shredded parmesan!
